Hi everyone, Got a few requests for the Mango Cheesecake that i made. Well guys here it is 

get your paper and pen ready to jot it down. Thanks to Todd's Kitchen for this. I loved 

making it. It would be best if you can use fresh ripe mangoes if not Canned Mangoes still 

works fine. Best part NO BAKING required. 

NO BAKE DELICIOUS MANGO CHEESECAKE

Ingredients:

Base:
250g Choc chip or any sweet biscuits you like
125g butter melted

Filling:
1 tablespoon of gelatine
1/4 cup of water
250g cream cheese
395g tin of sweetened condensed milk
300ml of thickened cream
2 cups mango pulp

Method:

1. Place cookies into a food processor or place it in a zip-lock bag. Beat it with a rolling pin 

till you have fine crumbs. 

2. Combine cookie crumbs and melted butter. Consistency we are after is like wet sand.

3. Press into a bottom of 9" cake tin that has been lined with baking paper. Best way for 

me is to use the back of a drinking glass and press down onto the pan. Gives it a tight form 

base. Put this in the refrigerator to set.

4. In a cup Add gelatine to hot water until completely dissolved. Leave it aside.

5. In a bowl Mix cream cheese, cream, and sweet condensed milk.

6. Add gelatine to the mixture and stir to combine.

7. Add Mango pulp mix well into the mixture.

Now time to assemble.

Get the Base out that has been setting in the fridge. Pour the Mango mixture on top of it.

Refrigerate for 30 minutes. Bring out and add mango slices to decorate. Then put it back to 

the fridge and leave it overnight for best result.
